One Pot Vegetarian Chili

A quick and easy one pot vegetarian chili. No crockpot needed!

Equipment

  • Pot
  • Cooking spoon (wooden or plastic)
  • Chopping knife
  • Cutting board
  • Measuring spoons
  • Measuring cups

Ingredients
  

  • 1 tbsp olive oil
  • 3 tbsp garlic, minced
  • 1 cup onion, diced
  • 4 cups spinach
  • 1 cup English peas
  • 1 cup carrots, sliced
  • 1 cup white beans
  • 3 cups zucchini, sliced in quarters
  • 28 oz fire roasted tomatoes
  • 4 cups vegetable broth
  • 2 bay leaves

Instructions
 

  • Sauté oil, garlic, onion and carrots until tender.
  • Add tomatoes and vegetable broth to mixture and simmer.
  • Add remaining ingredients including 2 bay leaves.
  • Simmer for 20 minutes.
  • Enjoy your chili!
