One Pot Vegetarian Chili

A quick and easy one pot vegetarian chili. No crockpot needed!

Cook Time 30 minutes mins
- 1 tbsp olive oil
- 3 tbsp garlic, minced
- 1 cup onion, diced
- 4 cups spinach
- 1 cup English peas
- 1 cup carrots, sliced
- 1 cup white beans
- 3 cups zucchini, sliced in quarters
- 28 oz fire roasted tomatoes
- 4 cups vegetable broth
- 2 bay leaves
Sauté oil, garlic, onion and carrots until tender.
Add tomatoes and vegetable broth to mixture and simmer.
Add remaining ingredients including 2 bay leaves.
Simmer for 20 minutes.
