One Pot Vegetarian Chili

- Pot
- Cooking spoon (wooden or plastic)
- Chopping knife
- Cutting board
- Measuring spoons
- Measuring cups
Ingredients
- 1 tbsp olive oil
- 3 tbsp garlic, minced
- 1 cup onion, diced
- 4 cups spinach
- 1 cup English peas
- 1 cup carrots, sliced
- 1 cup white beans
- 3 cups zucchini, sliced in quarters
- 28 oz fire roasted tomatoes
- 4 cups vegetable broth
- 2 bay leaves
Instructions
- Sauté oil, garlic, onion and carrots until tender.
- Add tomatoes and vegetable broth to mixture and simmer.
- Add remaining ingredients including 2 bay leaves.
- Simmer for 20 minutes.
- Enjoy your chili!
